Tonight we tried another new recipe found on Pintrest – Coconut Cashew Curry Tofu served with Mango Rice. This one was actually a chicken curry but I substituted this for tofu 🙂 and thought we would give it a go.
To prep for this recipe I chopped up some tofu, 2 mangos, one red onion, 60g cashews, some ginger and garlic 🙂
In the end the meal was creamy and tasty, however I think next time I would cook it slightly differently making the tofu and the mango slightly crispy before adding the coconut milk 🙂
Overall though a nice meal!
