Tonight we had one of our favourite meals – Pineapple Fried Rice served with some bread and butter. This meal is one of best we have discovered on our vegan journey so far. It’s fruity, fresh with a bit of spice 🙂
The actual cooking of this dish does not take very long at all, but it does involve a lot of prep. This all took me approx. 30 – 40 mins of lesiurely prep work. There was a lot of chopping and mincing involved 🙂
This meal is so worth extra time it takes to prepare though! If you like sweet and savoury flavours it’s the perfect meal!
