Tonight for dinner we had Tofu Coconut Curry served with basmati rice. It has been a little while since we had this one, well it feels like it anyway. I love this dish, it is spicy and yet creamy due to the addition of coconut milk. I do wish that it tasted a little more coconutty though – any suggestions?
To prep for this I soaked the basmati rice and pressed the tofu for 30mins. I spent this time chopping up all the veg. We had spring onion, pak choi and yellow pepper 🙂 the prep took about an hour in total as I like to cook the tofu a bit before adding it to the sauce as it makes it nice and crispy!
