Dinner #48

Tonight we had Mexican Pasta Bake with homemade Garlic Bread. This was supposed to be served with melted vegan cheese on the top but this didn’t fit within our budget this week. Instead I made sure to add a healthy serving of nutritional yeast to add that cheesy flavour.

For this meal I chopped up 2 cloves of garlic, a red onion, an orange pepper and added this to a pan with some oil. To this mixture I added some chipolate flakes, chilli powder, cumin, coriander and some jalapenos. I added some chopped tomatoes and kidney beans and some cooked pasta. Mixed this altogether and popped it in the oven for 15 mins.

This was seriously spicy. I think it was the jalapenos. I’m trying to use them up, oh well, helped to clear out my sinuses! 🤣
