Dinner #53

Tonight we had Tofu Coconut Curry served with basmati rice and Naan Bread. This time I added some desiccated coconut to the sauce in an attempt to add more coconut flavour. Which it definitely did – yum yum yum 🙂

We love this meal and it’s a great way to get lots of veg in one meal without realising it. This meal has Tofu, Tomatoes, Spring Onion, Pepper and Pak Choi in it which add to the lovely creamy flavour of the curry.
