Tonight for dinner we tried out another new recipe – Vegan Mac ‘n’ Cheese! I used to always love macaroni cheese when I was a child and still do now 🙂 I had seen this recipe both on Youtube and Pintrest and with lots of good reviews I thought I would give it a go.
I followed the recipe on ‘Vegan Yumminess’ which I chose as the instructions seemed really clear and I like the clean crisp look of her blog 🙂 I did not have any coconut milk, however, having read the comments I saw that this could be substituted for come almond milk and so I used this instead. Also as advised in the recipe I soaked my cashews for at least 30 minutes in order to help with blending – my tiny little blender would not have been able to cope with these!
I love the fact that you can make a cheesy lovely meal using potato, carrot, cashews,onion and nutritional yeast. This was really nice, however, not that cheesy – I might add some more nutritional yeast next time!
