Dinner #66

Tonight for dinner we had Buddha Bowls containing spinach, sweet pepper, Spring onion, homemade wedges, spicy bean burger and hummus.

I have been wanting to make a nice Buddha Bowl for a while now and as tonight is our first night back at the gym I thought this would be a good, relatively easy dinner to make when we get back.

I had originally intended to make these with falafel but when we went to do our food shop they had run out and so we decided that crumbling some spicy bean burgers into the bowls would be a good alternative.

These were lovely I even had enough to make some for my lunch 🙂
