Tonight for dinner we had Red Lentil & Spinach Dahl served with some Basmati Rice and Garlic & Corriander Naan Bread. I had been doing some research into recipes using red lentils as we brought a 5kg bag and I haven’t cooked any since becoming Vegan, which seems illogical I know!
This recipe sounded good and I thought I would give it a go 🙂 courtesy of HelloGlow! I happened to have a lot of the ingredients and only needed to by some coconut milk and some garam masala. I substituted the coconut oil for some rapeseed oil as this is what I had in the cupboard and gave it a go.
This dahl turned out lovely, nicely spice and perfect with the rice and Naan.
I served this up with some fluffy Basmati Rice and some Garlic & Corriander Naan – you can’t go wrong with this one!
