Dinner #88

Tonight’s dinner was another bowl of Tofu Stir Fry with Noodles. I love this dish, it’s sweet, salty, quick & easy! I discovered an simple stir fry sauce on Pinterest which I have been using and it makes for a really lovely tasting stir fry. It’s not the healthiest – but it tastes good πŸ™‚

To ensure the Tofu is cooked to perfection I drain this by leaving it all day in the fridge in my Tofuture Tofu Press – if you are Vegan or Vegetarian or you simply eat a lot of Tofu this is a must buy πŸ™‚ After the Tofu has drained I cut it into cubes and cook this in some sesame oil and a little of the sauce. I cook this until the Tofu is lightly browned on all sides. I then remove this from the heat to add to the stir fry later.

To make the stir fry I add some sesame oil to a pan and wait for this to heat up a little. After it has I add the (pre-packaged) stir fry vegetables. I know I should probably chop these up myself but after lots of prep during the week sometimes it is nice to add a little convenience back into my routine. I let the vegetables cook for approx 5 minutes before adding my straight to the wok noodles & the pre-cooked Tofu. I cover this in the sauce and let it cook away for another 5 mins before serving up.

This is fast becoming one of my favourite dishes not only due to the taste of the dish but also the convenience with which I can prepare it! Do you have any favourite quick Vegan meals – I am always on the lookout for new ideas to try?
